These Nicaraguan coffee beans come from Montecristo, a large coffee farm and protected nature reserve in the Peñas Blancas region of Jinotega. The farm sits within the Bosawás Biosphere Reserve, an area known for its rich biodiversity and dense forest cover. Coffee grows under a canopy of native trees, helping protect the local environment while creating a stable, shaded growing climate that supports slower cherry development and more complex flavours .
Montecristo is also closely tied to the local community. Alongside the farm, there is a school and nursery that provide education and childcare for both village families and the children of farm workers. Coffee is processed on-site before being dry milled at a central facility owned by the group, allowing for greater consistency and quality control across the estate. Environmental and social responsibility are key parts of how the farm operates, reflected in its Rainforest Alliance certification .
This particular lot is naturally processed, meaning the coffee cherries are dried with the fruit still intact. This method encourages sweeter, fruit-forward characteristics as the sugars from the cherry slowly ferment into the bean. Grown at altitudes between 900 and 1100 metres above sea level, the coffee is made up of varieties including Paraneima, Caturra, Catuai, and Marsellesa, all well suited to the region’s climate .
In the cup, you can expect a rounded sweetness with gentle fruit notes, balanced by a clean structure and soft acidity. It’s an approachable yet interesting coffee that reflects both the natural landscape it grows in and the careful, considered work done at every stage, from farm to mill.
