The beans are produced by the Coope Dota cooperative, specifically through the Microdota Mujer project, which is an initiative dedicated to empowering the 300 women involved in the cooperative.
Coope Dota has a longstanding commitment to environmental responsibility, achieving carbon-neutral certification in 2011. This certification underscores their approach to sustainable coffee farming, emphasising conservation and a low carbon footprint throughout their processing.
Microdota Mujer coffee is grown at elevations of 1,500 to 1,800 meters, where cool temperatures and fertile soil encourage slow development of the coffee cherries. The cherries are harvested by hand when they reach peak ripeness, with the growers targeting around 23 Brix (a measure of sweetness) for optimal flavour. After harvesting, the beans undergo honey processing, which involves removing the cherry’s skin but keeping some mucilage intact. This approach contributes a natural sweetness to the beans and enhances their complexity.
The drying process takes place on sunlit concrete patios, where beans are regularly raked to ensure consistent drying. This careful handling preserves the unique characteristics of the beans, resulting in a cup with bright acidity and distinct flavour notes. Typical tasting notes for Microdota Mujer coffee include hints of cranberry, grapefruit, cherry, and caramel, with underlying tones of marzipan for a balanced, nuanced profile.
