This Guatemala Peña Roja coffee originates from the Chaloum region in Huehuetenango, located in the western highlands of Guatemala near the Mexican border. This area is known for its varied microclimates due to its mountainous terrain. Peña Roja, meaning "red rock," is situated in the foothills of Peña Blanca, which reaches an altitude of 3,520 masl.
The beans are produced by the Cooperativa Agricola Integral Peña Roja, a small cooperative comprising 81 producers - 67 men and 14 women. This cooperative collaborates with the larger Fedecocagua union, providing access to broader markets, agronomic support, and shared resources that enhance coffee quality and sustainability. The cooperative also contributes to the community by running a nursery for children under eight, ensuring support for working families.
Coffee from Peña Roja is picked by hand and processed using a washed method that minimizes water usage. The process begins with floating to sort the beans, followed by wet pulping and a dry fermentation phase. The beans are then directed through water channels to sun-drying patios, which are often the rooftops of homes on the hillside.
Cupping notes for this coffee include delicate floral hints of pea and honeysuckle, layered with fruity elements like peach and melon. These flavours complement the base notes of toffee and milk chocolate, resulting in a well-rounded and complex profile.
