Siltepec is located in the central part of Chiapas. This coffee comes from the high-altitude area of the Sierra Madre, bordering the biosphere reserve El Triunfo, which is the habitat of an Endemic Bird Area, “El Quetzal”. This ecological region represents 30 percent of the flora in all of the Chiapas territory.
The microclimate in this region creates a cloud forest, due the Soconuscu rainforest zone around the Novillero River. The weather is humid with lots of shade, cool conditions at night and excellent soil, which together create a perfect environment for the development of specialty coffee.
Our El Jaguar comes from a group of small producers and is harvested and processed by hand. After harvesting it is de-pulped, fermented and washed before being dried in the sun.
Flavour Profile: Tangerine, chocolate and nuts with a medium/low acidity and pronounced sweetness.

A good coffee for a smooth strong taste.
Siltepec el jaguar is a very smooth coffee that leaves a great ‘aftertaste’ on the palette. Top marks. The packaging is very high quality and the delivery was very fast. All in all, Pebble and Pine have got it right 👍
Only just cracked this one open.
Only used for latte and cappuccino but is perfect. Strong and dark but still smooth easy to dial in on my sage.
Yet to try as americano and flask black.
It’s a banger so far though so I’m sure will be nice without the milk.
A new coffee to us, just to 'ring the changes' - Have been buying huehuetenango for about a year, but we think the HHT has a preferable 'nose' to it ( frankly it is 'to die for' ),so will revert to our old bean once we have finished the current bag of Siltepec.
