Nestled in the highlands of Jinotega, Nicaragua, Finca Los Andes - more commonly known locally as Finca La Pavona - is an estate managed by Ulrich Salamun and Dr. S. Khalil. Salamun, an Austrian and co-founder of the satirical comedy group "maschek", has been cultivating coffee in Nicaragua since 2003, combining his passion for the land with a meticulous approach to coffee production.
Situated at altitudes between 1,100 and 1,300 metres above sea level, the farm benefits from a favourable microclimate, ideal for growing high-quality Arabica varieties including Red Catuai, Caturra, and Paca. The beans are fully washed, undergoing pulping, fermentation, and washing on the farm itself before being pre-dried and transported to a family-owned dry mill. There, they are sun-dried, rested for a minimum of six weeks, hulled, and carefully prepared for export.
This coffee is graded SHG EP (Strictly High Grown, European Preparation), ensuring a high standard of bean size and sorting. In the cup, it offers a smooth and delicate profile, characterised by notes of vanilla, chocolate, and citrus. The balance of sweetness and bright acidity makes it particularly well-suited for pour-over and other filter brewing methods.
